I am very proud to say that I quit smoking 7 months ago! And apart from the obvious health benefits, I feel better, my skin has cleared, I can breathe deeply and I have tons of energy (and funnily enough time:) However, a well known side effect was a “slight” weight gain (can you read the sarcasm?). And as I generally do not pay attention to how many calories I eat, I decided to have a closer look at what I eat during the day. What exactly happened to me during that time will be elaborated in one of my next posts: “My food-baby”:)

While I was scrolling through some light and easy recipes I came across this recipe for a lukewarm asparagus salad that I quickly made my own. I tried it and it was such an explosion of flavour in my mouth, it instantly became one of my favorites! And I learned an important lesson: you do not need to add butter to everything:)

And the recipe is really quick: cut the stringy end of the asparagus and peel the lower third. Then cut them into smaller pieces. Fry the asparagus with a little olive oil, salt and pepper until the are done but still have a crunch (ca 10 Min). In the mean time, boil the pasta according to specifications. Mix the lime juice, the mustard, the salt and the vegetable stock. Chop the tomatoes and add the herbs and tomatoes to the dressing. When the pasta and asparagus are done, mix everything and season with salt and pepper to taste. Add the smoked salmon on top. Et voilà:)

  • 500 g green asparagus
  • 1 Tbsp olive oil
  • Salt/pepper
  • Juice of half a lime
  • 100 ml vegetable stock
  • 1/2 Tsp mustard
  • 2 tomatoes
  • 100 g pasta
  • 100 g smoked salmon

    I tend to trust the product coming out of the kitchen a bit more if the chef of the restaurant looks like he/she is testing the taste a bit to much 🙂
    That doesn’t mean I feel like putting my hand on his/her tummy though!
