Homemade Elderflower Syrup

Nature has so much to offer – colors, shapes and most of all tastes. When I came to Austria, I discovered the elderflower syrup. Or to be honest I discovered the “Hugo”, which is a white wine Spritzer and some elderflower syrup 🙂 Maybe it isn’t so popular in Luxembourg or I just never noticed it, but for me it was a absolutely new and intriguing taste – somewhat fruity and sweet, but also flowery and somehow tangy..only if you know the syrup, you can imagine this unique taste. Last year a sweet friend of mine gave me some homemade syrup and I was utterly convinced I had to try for myself.

And then I hit the motherload last week in my father-in-laws garden. 2 huge bushes with wonderful elderflowers. So I set out with my bucket and my scissors to harvest some flowers!

I had so many blossoms that I actually got about 4 liters of syrup. First boil the water, sugar and citric acid until everything has dissolved. Wash the lemons and cut them into larger slices. Now shake the elderflowers gently as to remove all possible insects. Do not wash them as they will loose their aroma. Lay the flower and the lemon slices in a big bowl and pour the water/sugar mixture over it. Let this mixture rest in the fridge for a few days and stir once in a while. After a few days (some say 1 , some say 5) take the liquid and pour it through a sieve. Filter that liquid again through a kitchen towel. Then boil this syrup for a minute or two and fill it into clean bottles. Boil the closed bottles again for 15 Min as to increase the shelf-life of the syrup. Et voilà 🙂

  • 30 elderflower blossoms
  • 2 l water
  • 1 kg sugar
  • 50 g citric acid
  • 3-4 lemons (or oranges, limes..)
